Preparation
- Preheat your oven to 400°F (200°C). Gather ingredients and baking equipment.
- In a large mixing bowl, combine ground beef, breadcrumbs, salsa, taco seasoning, and chopped cilantro. Mix until combined, being careful not to overmix.
- Shape small amounts of the mixture into meatballs about 1 to 1.5 inches in diameter and place them on a parchment-lined baking sheet.
- Bake for 20-25 minutes, watching for them to be browned and firm.
- Check doneness with a meat thermometer; ensure internal temperature is 160°F (70°C). Return to oven if not done.
- Remove from oven and serve warm in taco shells, over rice, or with guacamole.
