- Begin by lining an 8x8 inch baking dish with parchment paper.
- In a large mixing bowl, combine rolled oats and unsweetened cocoa powder.
- In a separate bowl, mix together the creamy peanut butter and honey until smooth.
- Gently fold the wet peanut butter and honey mixture into the dry oat and cocoa powder blend.
- Transfer the combined mixture into the prepared baking dish.
- Cover the dish with plastic wrap and refrigerate for at least 1 hour.
- Once set, melt the chocolate chips in a microwave-safe bowl in 30-second intervals.
- Pour the melted chocolate over the chilled bars and spread it evenly.
- Refrigerate again until the chocolate hardens, about 15-30 minutes.
- Lift the entire slab out of the pan using the parchment paper and cut into squares.
