Rice

Avocado Mix
  • 1 Diced avocado Replace with Greek yogurt for a different profile.
  • 1/4 cup Red onion, finely chopped Scallions can be substituted.
  • 1/4 cup Fresh cilantro, chopped Parsley can be an alternative.
  • 1 tbsp Olive oil Any neutral oil can work in its place.
For Serving
  • to taste Lime wedges Lemon wedges also work well.

Method
 

Preparation Steps
  1. In a medium bowl, whisk together honey, lime juice, lime zest, minced garlic, ground cumin, salt, and pepper until well combined.
  2. Coat the chicken breasts thoroughly in the marinade and refrigerate for at least 30 minutes.
  3. Rinse rice under cold water, then boil in chicken broth, cover, and simmer for 15 minutes.
  4. Preheat grill to medium-high heat and oil the grill grates.
  5. Grill marinated chicken for 6-7 minutes per side until the internal temperature reaches 165°F.
  6. In a medium bowl, combine diced avocado, red onion, cilantro, and olive oil.
  7. Layer jasmine rice, grilled chicken, and avocado mixture in bowls.
  8. Serve immediately garnished with lime wedges and additional cilantro.
