  • 8 ounces Rotini Pasta or bow tie pasta
For the Salad
  • 4 ounces Hard Salami sliced or chopped
  • 4 ounces Pepperoni sliced or chopped
  • 1 can Canned Artichoke Hearts quartered
  • 1 cup Cherry Tomatoes halved
  • 1 cup Olives mix of Kalamata and green olives
  • 1/2 cup Pepperoncini pre-sliced
  • 8 ounces Mozzarella Pearls no cutting required
  • 1/2 medium Red Onion thinly sliced
  • 1/4 cup Fresh Basil adjust to preference
For the Vinaigrette
  • 1/3 cup Olive Oil light-tasting
  • 1/4 cup Red Wine Vinegar
  • 2 cloves Minced Garlic
  • 1 teaspoon Italian Seasoning
  • to taste Salt
  • to taste Black Pepper
  • to taste Red Pepper Flakes

Method
 

Step-by-Step Instructions
  1. Cook the Pasta: Boil salted water, add pasta, and cook until al dente (8-10 minutes). Drain and rinse under cold water to cool.
  2. Make the Vinaigrette: Whisk olive oil, red wine vinegar, minced garlic, Italian seasoning, salt, black pepper, and red pepper flakes. Refrigerate for 15 minutes.
  3. Prepare the Salad Ingredients: Slice hard salami and pepperoni, halve cherry tomatoes, slice red onion, and chop artichokes. Keep everything organized.
  4. Combine and Chill: Mix cooled pasta with salad ingredients. Pour vinaigrette, mix gently, cover, and chill for 30-60 minutes.
  5. Serve Your Salad: Toss salad, adjust seasoning if needed, and optionally garnish with parmesan and fresh basil. Serve chilled.
