  • 8 oz Bow Tie Pasta or use rotini or favorite short pasta
  • 1 cup Corn Kernels fresh, canned or frozen
  • 1 cup Cherry Tomatoes halved
  • 1/2 cup Red Onion diced
  • 1 bunch Cilantro leaves and stems used
  • 1 medium Avocado adjust to taste
  • 1/2 cup Cotija Cheese optional
For the Dressing
  • 1 cup Plain Greek Yogurt or sour cream
  • 1/4 cup Fresh Lime Juice adjust to taste
  • 2 cloves Garlic whole
  • 1 tsp Salt
  • 1/4 tsp Cayenne Pepper or to taste

Method
 

Step-by-Step Instructions
  1. Make the Dressing: In a food processor, combine Greek yogurt, lime juice, cilantro, garlic, salt, and cayenne. Blend until smooth, about 30 seconds. Adjust seasonings if needed and refrigerate for 15 minutes.
  2. Cook Pasta: Boil salted water in a large pot, add pasta, and cook per package instructions (8-10 minutes) until al dente. Drain, rinse with cold water, and let cool.
  3. Prepare Veggies: Boil water in a medium pot, add corn, and cook for 1½ to 2 minutes. Drain. Halve tomatoes, dice onion, and chop cilantro.
  4. Combine Ingredients: In a large bowl, mix cooled pasta, corn, tomatoes, onion, and cilantro. Pour in dressing and toss until coated.
  5. Serve: Dish into bowls or a platter. Dice and sprinkle avocado on top. Optionally add cotija cheese. Serve immediately or chill.
