Method
 

Salad Preparation
  1. Wash and dry the mixed greens thoroughly.
  2. Add spinach and spring greens to a large salad bowl.
  3. Slice the cucumber diagonally and halve the cherry tomatoes.
  4. Dice the avocado and add to the bowl.
  5. Thinly slice the red onion and soak in cold water for 5 minutes if desired.
  6. Add red onion to the bowl and sprinkle crumbled feta on top.
  7. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  8. Drizzle the dressing over the salad and toss gently to combine.
  9. Serve immediately for best freshness.
