  • 1 pound Chicken breasts cut into bite-sized pieces
  • 2 tablespoons Extra virgin olive oil for sautéing
  • 2 cups Zucchini sliced into half-moons
  • 1 cup Red bell peppers diced into chunks
  • 1 medium Red onion sliced into strips
  • 1 cup Cherry tomatoes halved
  • 1/2 cup Kalamata olives pitted and halved
  • 3 cloves Garlic minced
  • 1/2 cup Sun-dried tomatoes chopped
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 1 teaspoon Dried thyme
  • 2 tablespoons Lemon juice freshly squeezed
  • 1/2 cup Feta cheese crumbled
  • 1/4 cup Fresh parsley optional garnish

Method
 

Cooking Instructions
  1. Prep all ingredients: Wash and chop vegetables as described.
  2. Heat olive oil in a skillet over medium-high heat, then cook the chicken for 6-8 minutes until golden brown.
  3. Remove the chicken and sauté sliced onion and minced garlic for 2 minutes.
  4. Add zucchini, red bell peppers, and halved cherry tomatoes, cooking for 4-5 minutes.
  5. Return chicken to the skillet, add sun-dried tomatoes, herbs, salt, and pepper, and combine.
  6. Finish with lemon juice, olives, and feta, then serve hot.
