Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line it with parchment paper.
  2. In a large mixing bowl, whisk together the all-purpose flour, baking powder, salt, and black pepper until combined.
  3. In a separate bowl, beat the eggs until frothy and stir in the olive oil, milk, and minced garlic.
  4. Pour the wet mixture into the bowl with the dry ingredients and gently stir together until just combined.
  5. Fold in the shredded mozzarella cheese, chopped sun-dried tomatoes, fresh basil, and grated Parmesan cheese if using.
  6. Pour the batter into your prepared loaf pan, smoothing the top. Sprinkle reserved mozzarella cheese on top.
  7. Bake for 45-50 minutes until the top is golden brown and a toothpick inserted comes out clean.
  8. Remove from oven, let cool in the pan for about 10 minutes, then transfer to a wire rack to cool for another 15-20 minutes.
