Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine Greek yogurt, optional mayo, chili powder, garlic powder, and salt. Squeeze the juice of fresh limes into the mixture, adding zest for extra brightness. Whisk until smooth and creamy, then set aside.
  2. Bring a large pot of salted water to a boil. Add rotini and cook according to package instructions until al dente, about 8-10 minutes. Drain without rinsing.
  3. Preheat your broiler and line an oven-safe pan with aluminum foil. Toss corn in avocado oil and sprinkle with chili powder. Broil for about 3-4 minutes until lightly charred.
  4. In a large bowl, gently fold together the cooked rotini, charred corn, shredded chicken, and cotija cheese with the dressing. Mix until thoroughly coated.
  5. Transfer the salad to a serving dish, sprinkle with additional cotija cheese, cilantro, and lime wedges. Serve at room temperature or chilled.
