Method
 

Baking Instructions

  3. Whisk eggs in a bowl, then scramble in a skillet on low heat for 4-5 minutes until fluffy.
  4. Warm tortillas in the microwave for 30 seconds to make them pliable.
  5. Assemble tacos with beef mixture, scrambled eggs, and cheese in tortillas, then place seam-side down in greased baking dish.
  6. Cover with foil and bake for 15 minutes, then uncover and bake an additional 5-10 minutes until cheese is bubbly.
  7. Let rest for a few minutes and serve with cilantro, avocado, sour cream, and salsa.
