  • 1/4 cup Honey or agave syrup for vegan
  • 2 cups Still Water or sparkling water when serving
For Serving
  • 1 bunch Mint Leaves for garnish, optional

Preparation
  1. Start by gathering the ingredients for your Peach Mocktail—ripe peaches, honey, still water, and mint leaves. Wash the peaches thoroughly and chop them into small chunks, discarding the pits.
  2. In a large saucepan, combine the chopped peaches, honey, and still water. Bring to a gentle boil over medium heat, stirring occasionally.
  3. Once boiling, reduce heat to low and simmer for about 15 minutes, occasionally pressing the peaches to release juices.
  4. Remove the pan from heat and let the mixture cool for about 30 minutes.
  5. Using a fine mesh sieve, strain the cooled mixture into a clean bowl, pressing solids to extract as much syrup as possible.
  6. To serve, pour about ⅓ cup of the peach syrup into each glass. Top with sparkling water, add ice cubes, and garnish with fresh mint leaves.
