Method
 

Preparation

  3. In a mixing bowl, toss the sweet potato rounds with olive oil, salt, black pepper, and smoked paprika.
  4. Arrange the seasoned sweet potato rounds in a single layer on the baking sheet.
  5. Roast for 25-30 minutes, flipping halfway through for even browning.
  6. Cool the rounds slightly on the baking sheet after roasting.
  7. Transfer sweet potato rounds to a serving platter and crumble feta cheese over the top.
  8. Drizzle honey over the feta-covered sweet potato rounds and garnish with parsley.
