  • 2 medium Avocados ripe
  • 1 cup Corn Kernels fresh or frozen
  • 1 cup Cherry Tomatoes halved
  • 1 cup Cooked Quinoa or Brown Rice any whole grain can be used
  • 1 small Red Onion diced
  • 2 tbsp Lime Juice fresh juice
  • 1 tsp Cumin adjust for heat preference
  • 1 tsp Chili Powder adjust for heat preference
  • 1 tsp Salt
  • 1 tsp Pepper
For Garnishing
  • 1/4 cup Fresh Cilantro optional
  • 1 tbsp Hot Sauce or Salsa optional

Method
 

Step-by-Step Instructions
  1. Marinate the Steak: Mix olive oil, cumin, chili powder, salt, and pepper. Rub marinade on flank steak, let marinate for at least 30 minutes.
  2. Prepare Cooking Equipment: Preheat grill or skillet to medium-high heat.
  3. Cook the Steak: Grill or skillet-cook steak for 4-5 minutes per side until medium-rare.
  4. Rest and Slice the Steak: Let steak rest for 10 minutes, then slice against the grain.
  5. Cook the Corn: Grill fresh corn for 10 minutes or sauté frozen corn for 5-7 minutes.
  6. Chop the Vegetables: Halve cherry tomatoes and dice red onion.
  7. Prepare the Avocados: Slice avocados, removing pit and drizzle with lime juice.
  8. Assemble the Bowl: Layer cooked quinoa or brown rice, steak, corn, tomatoes, onion, and avocado.
