  • 1 cup Fresh Blackberries Halved; substitute with raspberries if desired
  • 2 lemons Lemon Thinly sliced for tea
  • ½ lemon Lemon Juiced for ice cubes
  • handful Fresh Mint Leaves Use spearmint for a sweeter note
  • ½ cup Raw Honey Sweetens the tea naturally; optional substitutes available
  • Lemon Soda/Sparkling Water For topping; unsweetened sparkling water is an option
For the Ice Cubes
  • handful Fresh Rosemary Sprigs Cut into pieces; optional but delightful

Method
 

Step-by-Step Instructions
  1. In a bowl, combine 1 cup of filtered water with the juice of half a lemon. Add the halved blackberries and a handful of freshly cut rosemary sprigs, then carefully pour the lemon-water mixture into an ice tray. Freeze for 3-4 hours or overnight until solid.
  2. In a medium saucepan, bring 4 cups of filtered water to a rolling boil. Once boiling, add the handful of fresh mint leaves, two thinly sliced lemons, and ½ cup of raw honey. Reduce heat to low and let it simmer gently for about 5 minutes. Remove from heat and let it cool completely before discarding the lemon slices and mint.
  3. Combine the cooled lemon mint tea with the juice of an additional lemon and the leftover halved blackberries in a large pitcher. Stir gently to mix all the ingredients thoroughly before pouring.
  4. Fill tall glasses with blackberry rosemary ice cubes from step 1. Carefully pour the tea mixture over the ice and top each drink with lemon soda or sparkling water. Garnish with fresh blackberries, lemon slices, and mint leaves.
