Preparation
- Spray slow cooker with non-stick spray. Place chicken breasts evenly inside.
- Mix garlic, lemon juice, onion, water, olive oil, red wine vinegar, oregano, allspice, and lemon pepper in a bowl. Whisk until blended and pour over chicken.
- Cover and cook on HIGH for 3-4 hours or LOW for 6-8 hours until chicken shreds easily.
- For Tzatziki, mix yogurt, minced garlic, grated cucumber, parsley, and salt. Refrigerate for at least one hour.
- Shred chicken in the pot using two forks, mixing with cooking juices.
- Serve in warmed pocketless pitas with veggies and Tzatziki sauce.
