Ingredients
  

For the Chicken
  • 2 lbs Boneless, Skinless Chicken Breasts Chicken thighs can be used for richer flavor.
  • 4 cloves Garlic Minced for best result.
  • 1/4 cup Fresh Lemon Juice Apple cider vinegar can be used as a substitute.
  • 1 medium Onion Diced, any mild onion works.
  • 1 cup Water Creates the cooking liquid.
  • 2 tbsp Olive Oil Can swap with any neutral oil.
  • 2 tbsp Red Wine Vinegar White wine vinegar is a good alternative.
  • 1 tbsp Oregano Both fresh and dried work well.
  • 1 tsp Allspice Feel free to omit for a simpler taste.
  • 1 tsp Lemon Pepper Can replace with black pepper and extra lemon zest.
For the Tzatziki Sauce
  • 1 cup Fat Free Plain Greek Yogurt Regular yogurt gives a richer texture.
  • 1 medium Cucumber Squeeze to remove excess water.
  • 1/4 cup Fresh Parsley Dill can be used for a traditional touch.
  • 1 tsp Salt Adjust to taste.

Method
 

Preparation
  1. Spray slow cooker with non-stick spray. Place chicken breasts evenly inside.
  2. Mix garlic, lemon juice, onion, water, olive oil, red wine vinegar, oregano, allspice, and lemon pepper in a bowl. Whisk until blended and pour over chicken.
  3. Cover and cook on HIGH for 3-4 hours or LOW for 6-8 hours until chicken shreds easily.
  4. For Tzatziki, mix yogurt, minced garlic, grated cucumber, parsley, and salt. Refrigerate for at least one hour.
  5. Shred chicken in the pot using two forks, mixing with cooking juices.
  6. Serve in warmed pocketless pitas with veggies and Tzatziki sauce.
