For the Stuffing
  • 8 oz Bacon Diced; can substitute with mushrooms or diced butternut squash for vegetarian option.
  • 1 medium Yellow Onion Chopped; can replace with shallots.
  • 2 stalks Celery
  • 1/4 cup Parsley Chopped; can substitute with thyme or sage.
  • 1 cup Breadcrumbs Gluten-free breadcrumbs can be used.
For the Chicken
  • 1 whole Whole Chicken Organic recommended.
  • 4 medium Potatoes Chopped; can substitute with sweet potatoes.
  • 3 medium Carrots Chopped; canned or frozen can be used.
  • 4 cloves Garlic Minced.
  • to taste Seasonings (Salt, Pepper, Cayenne Pepper, Rosemary, Oregano)

Method
 

Step-by-Step Instructions
  1. Dice the bacon and cook in a skillet over medium heat until crispy, about 5-7 minutes. Remove bacon and set aside, leaving fat in the skillet.
  2. Add chopped onion and celery to the skillet and sauté over medium heat for 3-5 minutes until softened.
  3. In a large bowl, combine sautéed vegetables with parsley, breadcrumbs, salt, and pepper, then fold in crispy bacon.
  4. Preheat the oven to 400°F (200°C). Season the cavity of the chicken with salt and pepper, then spoon in the stuffing.
  5. Truss the chicken using kitchen twine to maintain its shape during roasting.
  6. Mix seasonings together and rub over the chicken skin.
  7. Place seasoned chicken in a roasting pan with potatoes, carrots, and minced garlic. Roast for about 90 minutes, until golden brown and internal temperature reaches 165°F.
  8. Let the chicken rest for 15-20 minutes before carving and serving.
