  • 1 large Egg or a flax egg (1 tbsp flaxseed meal + 2.5 tbsp water) for vegan option
  • 1 cup Breadcrumbs gluten-free if desired

Method
 

Step-by-Step Instructions
  1. Finely chop about 2 cups of fresh spinach and sauté it in a skillet over medium heat for 3-4 minutes until wilted.
  2. In a large mixing bowl, combine the sautéed spinach, 1 pound of ground meat, 1 cup of diced mozzarella cheese, 1 large egg, and 1 cup of breadcrumbs. Season with salt and black pepper, and mix gently.
  3. Cover the bowl and refrigerate for 15 minutes to firm up the mixture.
  4. After chilling, form the mixture into about 12 meatballs and place them on a parchment-lined baking sheet.
  5. Cook meatballs by sautéing in a pan over medium-high heat for 8-10 minutes or by baking at 200°C (400°F) for 20-25 minutes until golden.
  6. Serve warm with a dipping sauce or marinara for a delicious meal.
