For the Shrimp Filling

For the Burrito Assembly
  • 4 large Flour Tortillas, warmed
  • 2 cups Cooked Long-Grain White Rice
  • 1 cup Cooked Black Beans, rinsed and drained
  • 1 cup Shredded Mexican Cheese
  • 1 cup Shredded Lettuce
  • 1 cup Pico de Gallo, drained
  • 1 medium Avocado, thinly sliced
  • 1 tablespoon Chopped Chives for garnish.

Step-by-Step Instructions
  1. In a small bowl, combine mayonnaise, Sriracha, lime juice, and Old Bay seasoning. Mix well until evenly blended. Set aside.
  2. In a large skillet over medium heat, add extra-virgin olive oil. Sauté chopped onion and diced bell pepper for about 5 minutes until onion is translucent. Add sliced garlic and cook for another minute.
  3. Add peeled and deveined shrimp, ground cumin, and paprika, season with salt and pepper, and cook for about 3-5 minutes or until shrimp turns pink and opaque.
  4. Warm flour tortillas in the microwave for about 30 seconds. Assemble burritos by layering rice, black beans, shrimp mixture, cheese, lettuce, pico de gallo, avocado slices, and spicy aioli on each tortilla.
  5. Roll tortillas tightly, tucking in the ends to secure fillings. Serve seam-side down on a plate with additional aioli and a sprinkle of chopped chives.
