Ingredients

For the Filling
  • 1.5 lbs Ground Beef (85/15) Offers rich flavor; for lighter version, substitute with ground turkey or chicken.
  • 0.5 cup Chopped Onion Adds sweetness and moisture; shallots work well as a substitute.
  • 0.33 cup Finely Chopped Tomatoes Contributes freshness; use fresh for best results, or canned if drained.
  • 0.25 cup Minced Fresh Parsley Brightens flavors; cilantro can be swapped in for a different taste.
  • 1 clove Minced Garlic Boosts savory notes; garlic powder serves as a quick alternative.
  • 1 tsp Dried Oregano Imparts a Mediterranean aroma; Italian seasoning can easily replace it.
  • 1 tsp Dried Thyme Adds earthiness that complements beef; marjoram also works well.
  • 1 tsp Dried Rosemary (crushed) Offers a fragrant touch; herbes de Provence is a lovely substitute.
  • 1 tsp Dill Weed Provides a fresh taste; consider fennel fronds or tarragon instead.
  • 1 tsp Salt Essential for seasoning; adjust according to personal preference.
  • 0.5 tsp Pepper Essential for seasoning; adjust according to personal preference.
For the Wrap
  • 4 tortillas Flour Tortillas (10 inches) Perfect for wrapping; whole wheat or gluten-free tortillas make a great alternative.
For Dipping
  • Tzatziki Sauce Perfect complement; give hummus or tahini dip a try for variety!

Step‑by‑Step Instructions for Easy Greek-Style Kabob Rolls
  1. Preheat your oven to 475°F (245°C) and soak wooden skewers in water for about 15 minutes.
  2. Combine ground beef, chopped onion, finely chopped tomatoes, minced parsley, minced garlic, oregano, thyme, rosemary, dill weed, salt, and pepper in a large mixing bowl. Mix until sticky.
  3. Lay the flour tortillas flat and evenly spread the prepared meat mixture over each tortilla. Roll tightly into logs and wrap in plastic wrap. Chill in the refrigerator for at least 20 minutes.
  4. Remove the logs from the fridge and slice each into 1-inch thick pinwheels. Thread pinwheel pieces onto the soaked wooden skewers.
  5. Arrange the skewers on a greased baking sheet and bake for 5 minutes on each side until golden and slightly crispy.
  6. Switch your oven setting to broil and broil the kabob rolls for 1 to 2 minutes to enhance crispiness.
  7. Remove from oven, garnish with remaining parsley, and serve with tzatziki sauce for dipping.

Notes

Chilling the rolled logs helps them hold their shape when slicing, preventing the filling from spilling out during baking.
