Steps
- Brush the chicken breast with 10g of chipotle paste, season with paprika, salt, and pepper. Cook in air fryer at 180–200°C for 20–25 minutes or bake in oven at 200°C for 30 minutes.
- Heat oil in a frying pan, add the bell pepper, red onion, and chili. Sauté for 5–7 minutes until golden brown.
- Stir in another 10g of chipotle paste, black beans, broken microwave rice, and 50ml of water. Season with salt and pepper, and simmer until rice absorbs flavors.
- Prepare the fresh toppings: dice the tomato and season, chop the avocado just before serving.
- Slice the cooked chicken and assemble bowls with rice-bean mixture, topped with chicken, tomato, and avocado. Serve immediately.
