Ingredients
  

For the Chicken
  • 300 g Chicken Breast Ensure fully cooked.
  • 20 g Chipotle Paste 10g for marinating, 10g for rice.
For the Rice and Beans
  • 1 packet Microwave Rice Break up inside the packet.
  • 0.5 tin Black Beans Rinsed and drained.
For the Vegetables
  • 0.5 Bell Pepper Sliced, can swap with zucchini.
  • 0.5 Red Onion Sliced, can use yellow or white.
  • 0.5 Chili Finely diced, adjust for spice tolerance.
For Cooking and Serving
  • 50 ml Water Adjust for desired texture.
  • 0.5 Avocado Chopped just before serving.
  • 0.5 Tomato Diced, season with salt and optional garlic.

Method
 

Steps
  1. Brush the chicken breast with 10g of chipotle paste, season with paprika, salt, and pepper. Cook in air fryer at 180–200°C for 20–25 minutes or bake in oven at 200°C for 30 minutes.
  2. Heat oil in a frying pan, add the bell pepper, red onion, and chili. Sauté for 5–7 minutes until golden brown.
  3. Stir in another 10g of chipotle paste, black beans, broken microwave rice, and 50ml of water. Season with salt and pepper, and simmer until rice absorbs flavors.
  4. Prepare the fresh toppings: dice the tomato and season, chop the avocado just before serving.
  5. Slice the cooked chicken and assemble bowls with rice-bean mixture, topped with chicken, tomato, and avocado. Serve immediately.
