Step-by-Step Instructions for Chinese Beef On A Stick
  1. Begin by cutting the sirloin beef into 1-inch cubes for even cooking. Use a mallet or rolling pin to pound the beef in a large plastic bag for around 3 minutes.
  2. In a mixing bowl, combine 2 tablespoons of hoisin sauce, 2 tablespoons of sugar, 1 tablespoon each of oyster sauce and soy sauce, along with 1 tablespoon of cornstarch, 1 teaspoon of Chinese cooking wine, ¼ teaspoon of five-spice powder, and ½ teaspoon of baking soda. Mix thoroughly until smooth.
  3. Pour the marinade into the bag with the cubed beef, then seal the bag and massage to ensure every piece is thoroughly coated. Refrigerate the marinated beef for at least 8 hours, ideally up to 24 hours.
  4. Thread the marinated beef cubes onto skewers, leaving about ¼ inch of space between pieces for even cooking.
  5. For broiling, preheat the oven’s broiler to 500°F. If using an air fryer, preheat it to 400°F.
  6. Arrange the skewers on a foil-lined baking pan, broil for about 5 to 7 minutes on each side, watching closely for a lovely char.
  7. If using an air fryer, lightly spray the basket with non-stick cooking spray and air-fry for about 5 minutes on each side.
  8. Once cooked, remove the skewers and let them rest for a couple of minutes before serving.
