Ingredients

  • 2 teaspoons Cumin optional but recommended
  • 2 teaspoons Paprika smoked paprika can be used
  • 1 teaspoon Turmeric
  • 1 teaspoon Coriander can be substituted with parsley
  • 1 teaspoon Cinnamon
  • 4 cloves Minced Garlic adjust according to taste
  • 2 tablespoons Lemon Juice fresh is preferable
  • to taste Salt
  • to taste Pepper
  • 1.5 pounds Chicken Thighs (or Breasts)
Garlic Sauce
  • 1 cup Mayonnaise can substitute with Greek yogurt
  • 2 cloves Minced Garlic adjust according to liking
  • 2 tablespoons Lemon Juice fresh is best
  • to taste Salt

Method
 

Prepare the Marinade
  1. In a large mixing bowl, combine olive oil, cumin, paprika, turmeric, coriander, cinnamon, minced garlic, lemon juice, salt, and pepper. Whisk together until well blended.
Marinate the Chicken
  1. Add chicken thighs or breasts to the marinade, ensuring each piece is coated. Cover and marinate for at least 30 minutes or refrigerate for up to 24 hours.
Preheat
  1. Preheat your grill or non-stick pan over medium-high heat for about 5 minutes, adding oil if needed.
Cook the Chicken
  1. Place the marinated chicken on the hot cooking surface. Cook for 5-7 minutes on each side until golden-brown and internal temperature reaches 165°F (75°C).
Rest and Slice
  1. Remove chicken from heat and let it rest for about 5 minutes. Slice into bite-sized pieces.
Make the Garlic Sauce
  1. Whisk together mayonnaise, minced garlic, lemon juice, and salt in a small bowl until smooth.
Serve
