- Pat the chicken thighs dry and season with salt and black pepper.
- Heat olive oil in a Dutch oven and sear chicken thighs skin-side down for about 4-5 minutes.
- Flip the chicken and sear the other side for another 2 minutes, then transfer to a plate.
- In a mixing bowl, combine the Catalina sauce ingredients and whisk until smooth.
- Pour half of the prepared sauce into the Dutch oven, add seared chicken thighs, and pour remaining sauce on top.
- Cover the Dutch oven and bake for 45 minutes.
- Remove cover and bake for an additional 20-25 minutes.
- Let the dish rest for a few minutes before serving, garnish with parsley, and serve hot.
