Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Pat the chicken thighs dry and season with salt and black pepper.
  3. Heat olive oil in a Dutch oven and sear chicken thighs skin-side down for about 4-5 minutes.
  4. Flip the chicken and sear the other side for another 2 minutes, then transfer to a plate.
  5. In a mixing bowl, combine the Catalina sauce ingredients and whisk until smooth.
  6. Pour half of the prepared sauce into the Dutch oven, add seared chicken thighs, and pour remaining sauce on top.
  7. Cover the Dutch oven and bake for 45 minutes.
  8. Remove cover and bake for an additional 20-25 minutes.
  9. Let the dish rest for a few minutes before serving, garnish with parsley, and serve hot.
