Ingredients
  

For the Salad
  • 1 can garbanzo beans drained
  • 1 can white beans drained
  • 1 cup diced turkey breast omit for vegetarian
  • 1/2 cup diced salami swap or omit for lighter salad
  • 1 large green bell pepper any color works
  • 1 cup halved cherry tomatoes any small tomato variety
  • 1/2 cup sliced pepperoncini use pickled jalapeños for more spice
  • 1/4 cup finely chopped red onion green onions for milder flavor
  • 1/4 cup chopped parsley basil could also be used
  • 1 cup diced provolone or mozzarella dairy-free alternatives for vegan
For the Dressing
  • 1 cup plain Greek yogurt dairy-free alternatives
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon pepperoncini brine
  • 1 teaspoon Dijon mustard
  • 1 clove garlic minced
  • 1 teaspoon dried oregano
  • 1 pinch red pepper flakes
  • 1/2 teaspoon sea salt

Method
 

Dressing Preparation
  1. In a mixing bowl, whisk together Greek yogurt, olive oil, red wine vinegar, and pepperoncini brine until smooth.
  2. Add Dijon mustard, minced garlic, dried oregano, red pepper flakes, and sea salt. Blend until fully emulsified and set aside.
Combine Salad
  1. In a large mixing bowl, combine drained garbanzo beans, drained white beans, diced turkey, diced salami, diced green bell pepper, halved cherry tomatoes, and sliced pepperoncini.
  2. Toss in chopped red onion, chopped parsley, and diced provolone or mozzarella. Gently toss until evenly distributed.
Dress the Salad
  1. Pour the prepared dressing over the salad ingredients and toss gently to coat everything evenly.
Chill and Serve
  1. Cover and refrigerate for at least 30 minutes before serving. Adjust seasoning as needed and garnish with additional pepperoncini and cheese.
