  • 1 cup jasmine rice can substitute with basmati or brown rice
  • 1 can canned chickpeas rinsed and drained
For the Topping and Finishing
  • 1/2 cup feta cheese omit for non-dairy diets
  • 1 tablespoon extra-virgin olive oil for drizzling
  • 1 tablespoon dried oregano for garnishing
  • 1 tablespoon fresh oregano for additional flavor

Method
 

Step-by-Step Instructions
  1. In a mixing bowl, combine dried oregano, paprika, salt, and red pepper flakes. Drizzle olive oil over the chicken thighs and let marinate for at least 10 minutes.
  2. Heat a large skillet over medium heat and add olive oil. Sauté minced garlic for about 30 seconds until fragrant and golden.
  3. Add grape tomatoes and cook for 3–4 minutes until softened. Push vegetables aside and add marinated chicken thighs.
  4. Brown the chicken for about 5–7 minutes on each side or until cooked through.
  5. Stir in fresh spinach, chickpeas, jasmine rice, and lemon juice. Mix gently and let meld for 2–3 minutes.
  6. Remove from heat, crumble feta cheese on top, and drizzle with extra-virgin olive oil. Serve warm.
