Method
 

Step-by-Step Instructions
  1. Prepare the cauliflower by pulsing florets in a food processor until they resemble rice grains. Microwave in a bowl with a splash of water for 7 minutes until tender.
  2. Heat a skillet over medium heat with olive oil. Sauté smoked sausage for about 5 minutes until browned, then set aside.
  3. In the same skillet, add more olive oil if needed and sauté chopped bell peppers and onion for 4-5 minutes until softened.
  4. Add minced garlic and Italian seasoning, cooking for 1 minute until fragrant. Pour in chicken broth and simmer for 1 minute.
  5. Combine cooked cauliflower rice and sausage back into the skillet, stirring well and adjusting seasoning with salt and pepper. Garnish with parsley before serving.
