- Preheat your oven to 375°F (190°C) and grease a muffin tin with nonstick spray.
- In a large skillet, melt 1 tablespoon of butter over medium heat. Add the crumbled sausage, diced onion, colored pepper, and minced garlic. Sauté for 5-6 minutes until tender.
- In a mixing bowl, whisk together 6 eggs, 2/3 cup milk, 1/2 teaspoon salt, garlic powder, and black pepper. Fold in half of the shredded cheddar.
- Spoon the sausage and vegetable mixture into each muffin well, then pour the egg mixture over the filling, and top with remaining cheese.
- Bake in the preheated oven for 15-18 minutes until golden brown and set in the center.
- Let the muffins cool for a few minutes in the tin, then remove and place on a wire rack to cool slightly before serving.
