  • 1 large Onion, diced Can be omitted or swapped for green onions.
  • 1 large Colored Pepper, diced Any bell pepper works.
  • 1 cup Crumbled Precooked Breakfast Sausage Feel free to substitute with turkey or pork.
Optional Veggies
  • Spinach or Zucchini, chopped Feel free to add for extra flavor and color.
  • Broccoli, chopped Great way to sneak in veggies for a healthy boost.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a muffin tin with nonstick spray.
  2. In a large skillet, melt 1 tablespoon of butter over medium heat. Add the crumbled sausage, diced onion, colored pepper, and minced garlic. Sauté for 5-6 minutes until tender.
  3. In a mixing bowl, whisk together 6 eggs, 2/3 cup milk, 1/2 teaspoon salt, garlic powder, and black pepper. Fold in half of the shredded cheddar.
  4. Spoon the sausage and vegetable mixture into each muffin well, then pour the egg mixture over the filling, and top with remaining cheese.
  5. Bake in the preheated oven for 15-18 minutes until golden brown and set in the center.
  6. Let the muffins cool for a few minutes in the tin, then remove and place on a wire rack to cool slightly before serving.
