Filling
  • 2 cups chicken, cooked and shredded using rotisserie chicken can save time
  • 1 cup salsa verde opt for store-bought or homemade
  • 1/2 cup sour cream Greek yogurt works as a healthy substitute
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder optional for a spicy kick
  • 1 teaspoon salt
Toppings
  • 2 cups Monterey Jack cheese, shredded consider using Pepper Jack for heat
  • 12 tortillas flour or corn warming helps with easy rolling
Garnish
  • 1 tablespoon lime juice for zest
  • 1 fruit avocado sliced
  • 1/4 cup fresh cilantro chopped

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. In a mixing bowl, combine shredded chicken, salsa verde, sour cream, onion powder, garlic powder, ground cumin, chili powder, and 1 cup of cheese.
  3. Spread ½ cup of salsa verde on the bottom of the baking dish.
  4. Warm tortillas in the microwave for about 30 seconds to make rolling easier.
  5. Fill each tortilla with ¼ cup of the chicken mixture, roll tightly, and place seam-side down in the baking dish.
  6. Pour remaining salsa verde over the enchiladas, then sprinkle with remaining cheese.
  7. Cover with foil and bake for 20 minutes, then remove foil and bake for an additional 5 minutes until cheese is bubbly.
  8. Garnish with cilantro, avocado, and a dollop of sour cream before serving.
