Ingredients
  

For the Salmon Balls
  • 1 lb Fresh Salmon Fillet skin removed
  • 1/4 cup Fresh Parsley
  • 1/4 cup Fresh Cilantro
  • 1/2 cup Breadcrumbs or Almond Flour for Gluten-Free
  • 1 large Egg can use flax egg for vegan
  • 2 cloves Garlic minced
  • 1 tsp Smoked Paprika
  • 1 tsp Lemon Zest
  • to taste Salt
  • to taste Black Pepper
  • 1 tbsp Olive Oil for grilling
For the Creamy Avocado Sauce
  • 1 ripe Avocado
  • 1/2 cup Greek Yogurt or Sour Cream
  • 1 tbsp Lime Juice
  • 1 clove Garlic additional for sauce

Method
 

Preparation Steps
  1. Begin by finely chopping or pulsing the fresh salmon fillet in a food processor until it achieves a coarse texture.
  2. In a large mixing bowl, combine the salmon with parsley, cilantro, breadcrumbs, egg, minced garlic, smoked paprika, lemon zest, salt, and black pepper. Stir well until combined.
  3. Take a small amount and roll it into balls, approximately 2 inches in diameter. You should end up with about 12 to 14 salmon balls.
  4. Heat a skillet over medium heat and add olive oil. Once warm, carefully place the salmon balls in the skillet, grilling for 3-4 minutes on each side until golden brown.
  5. For the creamy avocado sauce, blend avocado, cilantro, Greek yogurt, lime juice, and additional garlic in a blender until smooth. Adjust seasoning as needed.
  6. Serve the grilled salmon balls with the creamy avocado sauce drizzled over them or as a dip.
