Ingredients
  

For the Salad
  • 8 ounces Rotini Pasta substitute with gluten-free pasta if needed
  • 1 cup Cucumber diced small
  • 1 medium Carrot grated
  • 1 medium Sweet Onion or green onions
  • 1 medium Bell Pepper finely diced
  • 1/2 cup Kalamata Olives pitted
  • 1/4 cup Fresh Parsley chopped
For the Dressing
  • 1 cup Plain Unsweetened Greek Yogurt or dairy-free yogurt for vegan option
  • 2 tablespoons Red Wine Vinegar or white vinegar
  • 2 tablespoons Lemon Juice fresh preferred
  • 1 clove Garlic minced
  • 1 teaspoon Onion Powder optional
  • 1 teaspoon Dried Oregano or fresh oregano
  • 1 tablespoon Fresh Dill or dried dill

Method
 

Cooking and Mixing
  1. In a large pot, bring water to a boil and add salt. Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
  2. In a large mixing bowl, combine the cooled rotini with cucumber, carrot, onion, bell pepper, olives, and parsley. Toss until evenly mixed.
  3. In a mason jar or bowl, blend Greek yogurt, red wine vinegar, lemon juice, garlic, onion powder, oregano, and dill. Shake or whisk until smooth. Adjust consistency with water if necessary.
  4. Pour the tzatziki dressing over the pasta mixture and gently toss to coat evenly.
  5. Cover and refrigerate the salad for at least one hour to let flavors meld before serving.
