For the Pork Mixture
  • 1 lb Ground Pork or substitute with ground chicken or turkey
  • 4 cups Coleslaw Mix or fresh shredded cabbage
For the Sauce
  • ½ cup Chicken Broth
  • 2 tbsp Mirin or substitute with rice vinegar and sugar
  • 3 tbsp Dark Soy Sauce or use regular soy sauce with molasses
  • 2 cloves Garlic minced
  • 1 tsp Fresh Ginger grated
  • 1 tsp Sriracha optional, adjust to taste
For Cooking
  • 2 tbsp Peanut Oil or substitute vegetable or canola oil

Method
 

Step-by-Step Instructions
  1. Cook noodles by boiling salted water and following package instructions for LoMein noodles, usually 5–7 minutes, then drain and rinse.
  2. Heat peanut oil in a skillet over medium-high heat, add ground pork and green onions, and cook until browned, about 5–6 minutes.
  3. Whisk together chicken broth, mirin, soy sauce, garlic, ginger, and sriracha in a small bowl and set aside.
  4. Add drained LoMein noodles and coleslaw mix to the skillet with cooked pork, pour in the sauce, and fold everything together.
  5. Cook for an additional 2–3 minutes until heated through and slaw has softened, then garnish with sliced green onions.
