- Cook noodles by boiling salted water and following package instructions for LoMein noodles, usually 5–7 minutes, then drain and rinse.
- Heat peanut oil in a skillet over medium-high heat, add ground pork and green onions, and cook until browned, about 5–6 minutes.
- Whisk together chicken broth, mirin, soy sauce, garlic, ginger, and sriracha in a small bowl and set aside.
- Add drained LoMein noodles and coleslaw mix to the skillet with cooked pork, pour in the sauce, and fold everything together.
- Cook for an additional 2–3 minutes until heated through and slaw has softened, then garnish with sliced green onions.
