- In a medium mixing bowl, combine Greek yogurt, peanut butter, honey or maple syrup, and vanilla extract, mixing until smooth.
- Line an 8x8-inch baking dish with parchment paper, extending over the edges, and coat with cooking spray.
- Pour the yogurt mixture into the prepared baking dish, spreading it evenly to a thickness of about 1 inch.
- Sprinkle granola and mini chocolate chips over the top, pressing them down gently into the mixture.
- Place the dish in the freezer and let it set for 3-4 hours until firm.
- Once frozen, lift the bars out using the parchment overhang and slice into squares.
