- Rinse the branzino under cold water and pat dry. Make three or more slits diagonally on both sides of the fish.
- In a bowl, mix melted butter, olive oil, garlic powder, oregano, paprika, sea salt, pepper, and lemon juice.
- Brush the seasoning mix all over the branzino, including inside the cavity and slits.
- Stuff the cavity of the branzino with minced garlic, sliced onion, and lemon slices.
- Arrange bell peppers and potatoes around the branzino on the baking sheet.
- Pour white wine or chicken broth over the vegetables.
- Sprinkle the remaining seasoning mix over the vegetables and branzino.
- Bake in the oven for 30 minutes until flaky and the internal temperature reaches 145°F (63°C).
- Drizzle with extra lemon juice and garnish with fresh parsley before serving.
