- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or aluminum foil.
- In a mixing bowl, whisk together honey, soy sauce, Dijon mustard, and minced garlic.
- Slice baby potatoes in half and spread them on the baking sheet. Drizzle with olive oil and sprinkle with salt and pepper.
- Roast the potatoes in the oven for about 20 minutes.
- Add sliced kielbasa over the potatoes and brush with honey garlic sauce, returning to the oven for 5 minutes.
- Prepare broccoli florets by tossing them with olive oil, salt, and pepper. Add to the pan after kielbasa cooks.
- Roast for an additional 15 to 20 minutes until everything is cooked through.
- Drizzle the reserved honey garlic sauce over the dish and garnish with parsley before serving.
