- In a large bowl, combine the ground beef, breadcrumbs, beaten eggs, diced onion, minced garlic, Worcestershire sauce, half of the fresh thyme, salt, and pepper.
- Transfer the meat mixture into a greased loaf pan or shape it into a loaf on a parchment-lined baking sheet, smoothing the top.
- Brush the top with ketchup and bake for 50-60 minutes, until internal temperature reaches 160°F (71°C).
- While the meatloaf bakes, sauté sliced mushrooms in butter until golden brown; add minced garlic and remaining thyme, cooking until fragrant.
- Pour in beef broth, simmer for 5 minutes, then add heavy cream and simmer until thickened.
- Let the meatloaf rest for 10 minutes before slicing and serving with mushroom gravy.
