Method
 

Preparation Instructions
  1. In a medium bowl, whisk together olive oil, red wine vinegar, minced garlic cloves, dried oregano, ground cumin, smoked paprika, salt, and pepper. Coat chicken thighs in this marinade and let marinate in the fridge for at least 1 hour.
  2. In a separate bowl, mix together Greek yogurt, grated cucumber, fresh dill, lemon juice, and salt. Stir until smooth and creamy, then refrigerate.
  3. Preheat grill or skillet over medium-high heat or set oven to 400°F (200°C). Grill, bake, or pan-sear chicken thighs for 20-25 minutes until cooked through, flipping halfway.
  4. Warm pita breads. Fill each pita with sliced chicken, tomatoes, onion, lettuce, and feta. Top with tzatziki sauce, olive oil, and parsley if desired.
  5. Serve the filled Mediterranean Chicken Gyros on a platter.
