  • 1 cup Crushed Pineapple well-drained
  • 1/2 cup Sweetened Flaked Coconut can substitute with unsweetened if preferred
  • 2 cups All-Purpose Flour
  • 2 teaspoons Baking Powder ensure it's fresh
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1 teaspoon Pineapple Extract optional

Preparation Steps
  1. Preheat your oven to 350°F (175°C) and grease an 8x4 inch loaf pan.
  2. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Beat in the eggs, one at a time, and then fold in the mashed ripe bananas, crushed pineapple, and coconut.
  4. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry mixture to the wet mixture, mixing gently until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 65 to 70 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool the loaf in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
