Ingredients
  

For the Meatballs
  • 1 pound Ground Lamb or Beef can substitute with ground turkey or chicken
  • 1/4 cup Fresh Parsley finely chopped
  • 1/4 cup Fresh Mint finely chopped
  • 1 medium Grated Onion drain excess water for better texture
  • 2 cloves Garlic minced
  • 1 cup Breadcrumbs gluten-free optional
  • 1 large Egg acts as binder
  • 1 tablespoon Lemon Zest fresh for maximum flavor
  • 1 teaspoon Dried Oregano or Italian seasoning
  • to taste Salt
  • to taste Pepper
  • 2 tablespoons Olive Oil for brushing
For Tzatziki
  • 1 cup Greek Yogurt low-fat is an option
  • 1/2 cup Grated Cucumber drain well to avoid runniness
  • 1 clove Garlic minced
  • 1 tablespoon Chopped Dill substitute with mint if desired
  • 1 tablespoon Lemon Juice fresh juice is best
  • 1 tablespoon Olive Oil
  • to taste Salt for seasoning

Method
 

Preparation
  1. Finely chop fresh parsley and mint, then grate the onion. Grate and drain the cucumber for tzatziki.
  2. Mince the garlic cloves and set aside.
Meatball Mixture
  1. In a large mixing bowl, combine the ground lamb or beef, prepared herbs, grated onion, minced garlic, breadcrumbs, egg, lemon zest, dried oregano, salt, and pepper.
  2. Mix gently until just combined.
Shape Meatballs
  1. Scoop portions of the mixture and roll into uniform balls, about 1 inch in diameter.
  2. Arrange on a lined baking sheet.
Cooking
  1. Preheat oven to 400°F (200°C). Brush meatballs with olive oil and bake for 15-20 minutes.
  2. Alternatively, pan-fry in a skillet over medium heat for 10-12 minutes.
Prepare Tzatziki
  1. In a small bowl, mix Greek yogurt with drained cucumber, minced garlic, dill, lemon juice, olive oil, and salt. Stir until creamy.
Serve
  1. Serve warm meatballs on a platter with chilled tzatziki alongside.
