  1. Combine the shredded mozzarella, crumbled feta, chopped spinach, diced tomato, sliced red onion, and black pepper in a mixing bowl. Mix until combined.
  2. Take one flour tortilla, spoon one-fourth of the filling onto one half, and fold over.
  3. Heat a skillet over medium heat, add olive oil, and let it shimmer.
  4. Place the filled tortilla in the skillet and cook for about 3 to 4 minutes, then flip.
  5. Cook the other side for an additional 3 to 4 minutes until crispy and golden.
