Ingredients
  

For the Salad
  • 8 ounces pasta (rotini or farfalle) short shapes for optimal dressing adherence
  • 1 pint grape tomatoes halved cherry tomatoes can substitute
  • 1 cup cucumbers preferably English cucumbers
  • 1 medium red onion can substitute with green onions
  • 2 cups baby spinach arugula is a peppery alternative
  • 1/2 cup pitted green and black olives mixed varieties work well
  • 1 cup feta cheese can use goat cheese for variation
For the Dressing
  • 1/2 cup olive oil extra virgin recommended
  • 1/4 cup red wine vinegar white wine vinegar can be a substitute
  • 2 cloves garlic freshly minced or garlic powder in a pinch
  • 1 tablespoon Dijon mustard omit for a lighter dressing
  • 1 teaspoon oregano dried is fine, fresh adds vibrance
  • 1 teaspoon thyme lemon thyme adds unique flavor
  • to taste salt adjust to your preference
  • to taste pepper adjust to your preference
  • 1 tablespoon honey optional for sweetness, maple syrup for vegan

Method
 

Cooking and Preparation
  1. Cook the pasta in boiling salted water for 8–10 minutes until al dente. Drain and rinse under cold water.
  2. In a mixing bowl, combine halved grape tomatoes, sliced cucumbers, diced red onion, and baby spinach.
  3. Add cooled pasta to the vegetable mixture and gently fold together.
  4. In a small bowl, whisk together olive oil, red wine vinegar, minced garlic, Dijon mustard, oregano, thyme, salt, and pepper.
  5. Drizzle the dressing over the pasta and vegetables, tossing gently to coat evenly.
  6. Fold in crumbled feta cheese and mix without breaking it apart too much.
  7. Chill for 30 minutes to allow flavors to meld or serve immediately.
