- Preheat your oven to 400°F (200°C).
- Lightly oil a medium-sized baking dish with olive oil.
- Layer sliced red onions, halved cherry tomatoes, pitted Kalamata olives, and capers in the prepared baking dish.
- Drizzle the vegetable mix with olive oil, followed by a sprinkle of salt and black pepper.
- Pat the cod fillets dry and place them on top of the vegetable mixture.
- Drizzle more olive oil over the cod and zest half a lemon on top. Sprinkle dried oregano.
- Bake for about 20 minutes, until the cod is opaque and flakes easily.
