  • 1 cup Kalamata Olives Pitted
  • 1 cup Cherry Tomatoes Halved
  • 1 medium Red Onion Sliced
  • 3 cloves Garlic Minced
  • 2 tablespoons Capers
For Flavor and Seasoning
  • 3 tablespoons Olive Oil Plus more for drizzling
  • 1 teaspoon Dried Oregano Or fresh to taste
  • 1 medium Fresh Lemon Zested and juiced
  • to taste Salt
  • to taste Black Pepper
For Garnish
  • 2 tablespoons Fresh Parsley Chopped

Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Lightly oil a medium-sized baking dish with olive oil.
  3. Layer sliced red onions, halved cherry tomatoes, pitted Kalamata olives, and capers in the prepared baking dish.
  4. Drizzle the vegetable mix with olive oil, followed by a sprinkle of salt and black pepper.
  5. Pat the cod fillets dry and place them on top of the vegetable mixture.
  6. Drizzle more olive oil over the cod and zest half a lemon on top. Sprinkle dried oregano.
  7. Bake for about 20 minutes, until the cod is opaque and flakes easily.
  8. Remove from the oven and drizzle fresh lemon juice over the cod. Garnish with freshly chopped parsley.
