  • 6 cups Mini Marshmallows (white and lemon-flavored) Use all white if lemon-flavored ones aren't available.
  • 1 tablespoon Lemon Zest Use fresh for best flavor.
  • 1 teaspoon Lemon Extract (optional) Omit for a less tart treat.
  • 6 cups Rice Krispies Cereal Any puffed rice cereal can be used.
For the Drizzle
  • 1 cup White Chocolate Chips Dark chocolate can be used as an alternative.

Method
 

Step-by-Step Instructions
  1. Grease a 9x9-inch baking pan with butter or line it with parchment paper.
  2. Melt 4 tablespoons of butter in a large saucepan over low heat. Add both marshmallows and stir continuously until melted.
  3. Remove from heat and mix in lemon zest and lemon extract, stirring until evenly distributed.
  4. Pour in Rice Krispies and stir gently until well coated.
  5. Transfer mixture to prepared pan and press down evenly with a buttered spatula.
  6. Melt white chocolate chips in the microwave and drizzle over the cooled treats.
  7. Allow to cool for at least 30 minutes, then cut into squares or rectangles.
