- In a large pot, place a generous handful of fresh lavender and around two cups of freshly washed mint leaves. Bruise the mint leaves gently.
- Pour eight cups of filtered water over the prepared herbs. Bring the mixture to a rolling boil over medium-high heat.
- Once boiling, reduce the heat to low and let the tea simmer for 20 minutes, allowing the flavors to meld beautifully.
- After simmering, strain the tea using a fine mesh strainer into a heatproof pitcher, discarding the solid herbs.
- Serve hot or allow to cool for an iced version. Pour over ice with a sprig of mint for garnish.
