  • 1 tablespoon Basil Fresh or dried.
  • 1/2 cup Olives Choose your favorite.
  • 1/4 cup Parmesan Cheese Nutritional yeast as a dairy-free option.
For Serving (Optional)
  • 1 cup Arugula Can substitute with spinach or skip.

Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat for 1-2 minutes until shimmering.
  2. Add 4-5 minced garlic cloves, sautéing for 30 seconds until fragrant and golden.
  3. Introduce the cleaned squid to the pan and cook for 2-3 minutes, stirring occasionally.
  4. Add 2 tablespoons of tomato paste and 1 teaspoon of dried basil, mixing for about 1 minute.
  5. Incorporate ½ cup of olives and a handful of arugula, heating through for 1-2 minutes.
  6. Transfer to a serving bowl and sprinkle with freshly grated Parmesan cheese.
