- Preheat your oven to 300°F (150°C). Season the chuck roast generously with salt and pepper on all sides.
- In a Dutch oven, heat 2 tablespoons of olive oil over medium-high heat and sear the meat for 3-4 minutes per side until golden-brown.
- Add the beef broth, soy sauce, Worcestershire sauce, and Italian seasoning to the pot, along with pepperoncini and giardiniera. Cover and braise in the oven for approximately 3 hours.
- For the aioli, slice the top off a garlic bulb, drizzle with olive oil, wrap in foil, and roast alongside the beef for about 1 hour.
- Let the garlic cool, mash it and mix with mayonnaise, lemon juice, and a pinch of salt and pepper until smooth.
- Once the beef is tender, shred it into bite-sized pieces and return it to the broth. Simmer for an additional 30 minutes.
- Slice the hoagie rolls open and broil for 2-3 minutes until golden, then add provolone cheese on top and broil for another minute.
- Assemble sandwiches with roasted garlic aioli, shredded beef, and giardiniera or preferred vegetables.
