  • 3 pounds Chuck Roast Grass-fed preferred

  • 4 cups Beef Broth Low-sodium preferred
  • 1/4 cup Soy Sauce Substitute with tamari for gluten-free
  • 2 tablespoons Worcestershire Sauce
  • 1/2 cup Pepperoncini Peppers Mild or medium
  • 1/2 cup Giardiniera Mild or spicy
  • 1 tablespoon Italian Seasoning
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
For the Roasted Garlic Aioli
  • 1 whole Garlic Bulb Roasted for sweetness
  • 1 cup Mayonnaise Can substitute with Greek yogurt
  • 2 tablespoons Lemon Juice Use fresh for best flavor
For Assembly
  • 4 rolls Crusty Hoagie Rolls Avoid soft bread
  • 8 slices Provolone Cheese Optional for dairy-free

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 300°F (150°C). Season the chuck roast generously with salt and pepper on all sides.
  2. In a Dutch oven, heat 2 tablespoons of olive oil over medium-high heat and sear the meat for 3-4 minutes per side until golden-brown.
  3. Add the beef broth, soy sauce, Worcestershire sauce, and Italian seasoning to the pot, along with pepperoncini and giardiniera. Cover and braise in the oven for approximately 3 hours.
  4. For the aioli, slice the top off a garlic bulb, drizzle with olive oil, wrap in foil, and roast alongside the beef for about 1 hour.
  5. Let the garlic cool, mash it and mix with mayonnaise, lemon juice, and a pinch of salt and pepper until smooth.
  6. Once the beef is tender, shred it into bite-sized pieces and return it to the broth. Simmer for an additional 30 minutes.
  7. Slice the hoagie rolls open and broil for 2-3 minutes until golden, then add provolone cheese on top and broil for another minute.
  8. Assemble sandwiches with roasted garlic aioli, shredded beef, and giardiniera or preferred vegetables.
