- Brown the meat in a large skillet over medium-high heat for about 5–7 minutes, breaking it apart until no longer pink. Add the chopped onion halfway through to soften.
- Stir in minced garlic and sauté for an additional minute until fragrant. Drain excess grease from skillet.
- Transfer the meat and onion mixture to the crockpot, scraping up any browned bits.
- In a separate bowl, whisk the beef broth and tomato paste together until smooth, then pour over the meat in the crockpot.
- Stir in the diced tomatoes, beans, and spices. Mix thoroughly to ensure even seasoning.
- Cover and set the crockpot to cook on LOW for 6-8 hours or HIGH for 3-4 hours. Add salt and pepper to taste during the last 30 minutes.
