Step-by-Step Instructions for Healthy Twix Bars
  1. Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
  2. In a mixing bowl, combine almond flour, melted butter, maple syrup, vanilla extract, and salt until a cohesive dough forms. Press this mixture firmly into the bottom of the prepared pan, then bake for 10-12 minutes until golden brown. Let cool completely.
  3. In another bowl, mix together creamy peanut butter, maple syrup, vanilla extract, and almond flour until smooth. Spread over the cooled shortbread base and freeze for at least 1 hour.
  4. Melt chocolate chips and coconut oil together in a double boiler or microwave until smooth, stirring frequently.
  5. Remove the caramel-shortbread block from the freezer, slice into 16 bars, then dip each bar in the melted chocolate, allowing excess to drip off.
  6. Place the coated bars on a parchment-lined tray and return to the freezer for about 10 minutes to allow the chocolate to harden.
