Step‑by‑Step Instructions
  1. Preheat your oven to 400°F (200°C) and line two baking sheets with parchment paper.
  2. Slice the sweet potatoes into thin, even rounds for uniform roasting.
  3. Mix sweet potatoes with olive oil, garlic powder, onion powder, cumin, smoked paprika, oregano, chili powder, and cayenne pepper in a bowl. Toss until evenly coated.
  4. Spread sweet potato slices on baking sheets. Season with salt and pepper. Bake for 15 minutes, flip slices, and bake for another 15 minutes until golden brown.
  5. Transfer roasted sweet potatoes to a baking sheet, add black beans, and sprinkle cheese on top. Bake for 10 minutes until cheese is melted.
  6. Garnish with jalapenos, green onions, pico de gallo, and drizzle avocado cilantro crema. Serve immediately.
