Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch casserole dish.
  2. Wash and chop zucchini, bell peppers, and mushrooms into uniform bite-sized pieces.
  3. Sauté the chopped vegetables in a large skillet with olive oil for 5-7 minutes until tender.
  4. In a mixing bowl, whisk the eggs, then fold in sautéed vegetables, spinach, cheese, and spices.
  5. Pour the mixture into the greased casserole dish and spread evenly.
  6. Bake the casserole for 30-35 minutes until the egg is set and the top is golden brown.
