  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper

  • 1 cup Tomato Sauce or salsa for extra flavor

  • 4 large Flour Tortillas or whole wheat / corn for healthier option
  • 1 tablespoon Spicy Mayo can use regular or chipotle mayo
  • 1 cup Cooked Fried Rice or quinoa
  • 1 cup Nacho Cheese Sauce or shredded cheese
  • 1 cup Sour Cream or plain yogurt
  • 1 cup Crushed Tortilla Chips can substitute with crushed crackers
For Serving
  • 2 cups Fresh Salad
  • 2 cups Crispy Tortilla Chips to serve with salsa

Method
 

Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add 1 diced onion and sauté for 5-7 minutes until soft and translucent.
  2. Add 1 pound of ground beef to the skillet with the sautéed onions. Cook for 8-10 minutes, breaking the meat apart until browned.
  3. Stir in 1 teaspoon each of salt, black pepper, smoked paprika, and dried oregano into the beef mixture. Add 1 cup of tomato sauce, simmer for 5 minutes.
  4. Warm the large flour tortillas in a dry skillet over medium heat for about 30 seconds on each side, or until pliable.
  5. Spread a layer of spicy mayo onto each warmed tortilla, followed by the seasoned beef mixture, cooked fried rice, nacho cheese sauce, sour cream, and crushed tortilla chips.
  6. Fold the tortillas over the filling and grill each burrito in a lightly greased skillet for 3-5 minutes per side until golden brown.
  7. Remove the burritos from the skillet, let cool briefly, and slice in half to serve with salsa or salad.
